Meet a Re-Imagineer: Lauren Driscoll

Q1: Many founders have a defining moment. How did your realization about the limits of traditional healthcare shape your path?
Earlier in my career in managed care, the sheer volume of procedures tied to diabetes and other diet-related conditions moving through the system every day – amputations, heart surgeries, dialysis, ED admissions – really struck me. These weren’t just expensive line items; they represented people whose disease had progressed to the point of serious complication. Much of it felt both heartbreaking and, in many cases, preventable.

I realized that our healthcare system was highly efficient at paying for procedures once the disease advanced, but far less effective at supporting people earlier, when meaningful change was still possible. Poor diet sits at the center of many of these conditions, yet it has historically been treated as peripheral to care. And real dietary change is complex – food is emotional and cultural, many of us have nostalgic ties to unhealthy foods, and ultra-processed foods are engineered to keep us coming back.

I came to believe that structured dietary behavior change can function as a real treatment for diet-related disease. When paired with clinical guidance and exposure to healthier food, it can be delivered as a time-limited intervention that helps people reset habits, improve health, and avoid many of the downstream costs and complications I saw every day. That realization ultimately led me to found NourishedRx.

Q2: Tell us about NourishedRx and the problem you’re solving.
NourishedRx is a technology-enabled Food-is-Health platform designed to help healthcare organizations address diet-related chronic disease in a practical, scalable way. We combine registered dietitian care, clinically tailored food support, and increasingly AI-driven engagement tools to help people make sustainable changes in how they eat and live.
We view dietary behavior change as a time-limited therapeutic intervention – one that can significantly improve outcomes and reduce avoidable healthcare utilization when delivered with the right structure and support. Our platform is built to align with value-based care, where improving health outcomes and reducing the total cost of care are directly connected. When nutrition is treated as treatment, not an afterthought, the return on investment becomes clear.

Technology is what allows this model to scale. By integrating data, personalization, and AI-enabled engagement, we’ve created a flywheel where better outcomes drive payer adoption, which expands access and further improves results. The model is closely aligned with the growing national focus—across both public and private sectors – on addressing the root causes of chronic disease rather than simply managing its consequences.

Q3: What advice would you give readers who feel strongly about society’s challenges and want to help drive solutions?
If you feel strongly about a problem, pay attention to that instinct – it’s often pointing you toward meaningful work. Start by getting close to the issue and listening to the people most affected. Real solutions come from understanding daily realities, not just theories.

Second, don’t assume impact and viability are mutually exclusive. Some of the most powerful solutions today sit at the intersection of mission and sustainable business models. When incentives are aligned correctly, positive change can scale much faster.

Finally, begin before you feel fully ready and find collaborators along the way. Complex challenges are rarely solved alone. Progress tends to come from small, practical steps taken consistently over time.

Meaningful change isn’t instantaneous, but when purpose, persistence, and aligned incentives come together, it’s remarkable how quickly a compelling business can take shape.
